There hasn't been much going on these days for us. We are looking more closely at buying a townhouse (the $8,000 government 'gift' is a big incentive), but we feel bad moving so soon after Joe was put into the bishopric. Luckily, the Bishop is a real estate agent and understands our position. Other than that,we are just working. Joe took second place in a business competition at USU, and they entered into the state competition. I feel like a widow sometimes because Joe has been gone a lot lately, so if anyone is bored and wants to hang out....
I really don't know what to post, so here are some random pictures/facts/stuff.
Our favorite TV series would have to be Psych. It is HILARIOUS! We own the first two seasons and watch them frequently. Always makes me laugh.
One of my favorite recipes is lasagna. Yum. I'm not a fan of cottage cheese, so I absolutely love this recipe:
1 lb. ground beef
1/4 onion, chopped
1 clove garlic, minced
2 C beef broth
2 (5 oz.) tomato paste
1/2 tsp oregano
1 tsp basil
9 lasagna noodles
parmesan & mozarella cheese
Brown ground beef, onion, and garlic in skillet. At the same time, combine beef broth, tomato paste, oregano, & basil in saucepan and whisk. When beef mixture is done, add to sauce and simmer for 20-30 minutes. In the meantime, heat water and cook 9 lasagna noodles.
Layer in 9 x 13 pan: First, put a little bit of meat mixture in the bottom so the noodles don't go crunchy, then lay three noodles side-by-side, then add meat, then cheese, noodles, meat, cheese, etc... It does need quite a bit of cheese, so don't hesitate adding quite a bit. (If you're in a hurry, my mom makes this with three cheese ravioli. Make the sauce, and instead of layering it with noodles, layer it with the cheese ravioli and add some cheese to the top.) Cover with aluminum foil, and cook at 350 C for 30 minutes. take tinfoil off and let cook until cheese is brown!
My favorite movies are: Pride & Prejudice, Sense & Sensibility, Enchanted, Narnia, Rudy, Singing in the Rain, and Remember the Titans. To be fair to Joe, his favorites would be: Rocky (I-V, Balboa), Flyboys, Dark Night & Batman Begins, and Star Wars.
My favorite books (& Joe's for the most part) are: Harry Potter, Inheritance (Eragon, Eldest, etc), Peter and the Starcatchers (trilogy), Inkheart (trilogy), Twilight series, and I've recently started the Dragonlance series. I really love to read.
Here is one of my favorite pictures. It's our first (& only) underwater kiss. We were getting ready to go to Mexico (which didn't happen), and I tried out scuba diving. I liked it in the pool, but I think I would panic in open water.
And for those of you who asked why I had been to to the doctor so many times, well here it is. First, I developed these weird bubbles/blisters on my hands and feet, which turned out to be scabies (small mites that burrow under your skin). Luckily those were easy to get rid of. Two weeks later I had a checkup, tests run that didn't give me the answers I was expecting, had a cyst removed right below the skin on my belly (benign), had to go to the hospital for more tests, then back to the doctors to tell me that I have another cyst farther below that is 1.9 cm in diameter for which I am taking medication for. Luckily, it's been quiet in February.

There is a $100 fine for feeding the animals, but judging on the friendliness of this squirrel I bet they still get fed! All the squirrles would come up, and give a "begging" look!
Car ride to Vegas. Joe timed the camera to take a picture, but didn't get him in it!
In front of the Bellagio waiting for the water show to start. But they canceled it do to the winds! I was very sad.
It took Joe & I a few minutes to realize that we weren't outside shopping when we saw the ceiling!
Las Vegas at night was beautiful & ugly at the same time. The lights & buildings are all unique and pretty, but there were a lot of people who were drunk/drinking, smoking, and trying to give you cards. Overall, it was a very fun trip!
